Quick and Easy Beef Stew

When it’s cold outside, a warm and hearty stew can save you from sadness (and hunger!). This beef stew comes together in about 30 minutes. We don’t always have a lot of time to cook meals, but that doesn’t mean they can’t be good! That’s why we created this stew.

About 2 pounds of a tender cut of beef cut into small cubes

2 large potatoes cut into small cubes

2 large carrots cut into small cubes

1 large yellow onion, diced

4-6 cups vegetable or beef stock

2 cups rice

A sprinkle of flour

Salt and pepper

Oregano

  1. Combine a handful of flour with a little salt and pepper in a medium sized bowl.
  2. Toss the cubes of beef in the flour mixture, making sure to coat each piece of meat evenly.
  3. In a medium to large soup pot over medium heat, add a splash of olive oil. Toss in the beef and the onions, and stir while cooking for about three minutes, or until all the sides have browned nicely.
  4. Pour in the stock, and add the carrots and potatoes. Reduce heat to medium low.
  5. Stir and season accordingly.
  6. Cook until the potatoes and carrots are tender. If you wish, you can add the rice to the stew while it’s cooking and prepare it that way. Otherwise, prepare the rice separately and serve the stew on top of it!

Let’s face it: sometimes in the mornings, you skip breakfast. You just don’t have time, and so what if you don’t eat until lunch, right? Wrong. You’re missing out on a morning’s worth of nutrients your body needs to keep from crashing. Try eating breakfast every day just for one week and let us know how you feel after. Chances are, you’ll feel a heck of a lot better!

Here’s a really simple trick for you to try: Overnight Oats. Perhaps you’ve heard of them? They’re extremely easy to make, and packed full of protein and fiber that your body needs. Plus, overnight oats are easier for your body to digest. What are you waiting for? These oats are gluten-free, and this recipe can even be vegan if you swap out the yogurt for soy or almond milk. From there, the world is yours. You can add berries, maple syrup, some Sugar Plum Cherry Almonds, and whatever else your heart desires. The best part is… This only takes about 2 minutes to prepare!

 

Ingredients

1 cup rolled oats

¾ cup greek yogurt, or almond milk, or regular milk

Honey

Berries and Sugar Plum Cherry Almonds for garnish

  1. Combine the oats, yogurt, and honey in a jar.
  2. Leave in the fridge overnight, or for at least 6 hours. This is where the magic happens – the oats absorb the moisture from the yogurt or milk. Cool!
  3. The next morning, you can eat your oats right out of the jar. Throw some Sugar Plum Cherry Almonds and berries on top for the perfect breakfast. Your body will thank you. Enjoy!

Parmesan Beer Pretzels

Parmesan Beer Pretzels

These pretzels are delicious thanks to the addition of beer. It gives it a great flavor that everyone at your party or get together will be sure to enjoy! For an extra zing, top them with a little shredded cheese before going into the oven. You can also brush them with melted butter after baking, and then top them with parmesan cheese.

 

Ingredients:

1 package instant yeast (7g)

½ teaspoon salt

1 tablespoon white sugar

1 cup beer (any kind)

¼ cup water, lukewarm

¼ stick butter, plus extra for brushing

3 cups whole wheat flour

½ cup parmesan cheese

3 tablespoons baking soda

  1. Combine yeast, salt, sugar and water in a measuring cup and let it sit for a few minutes. You should see bubbles – this means your yeast is alive!
  2. Cut the butter into tiny pieces, and then rub it into the flour using your fingertips until it’s almost “invisible.”
  3. Make a hole in the center of the flour. Pour in the beer, then the yeast mixture. It will bubble a lot.
  4. Stir it all together and knead for 5 minutes. Let it proof (rise) for 30 minutes.
  5. Turn the dough onto a work surface. Use a little flour if it gets too sticky! Cut the dough into 16-20 pieces depending on how large you like your pretzels.
  6. Roll the pieces of dough into 14” strands. Then, make a circle and twist the ends together (see photo). Pull the ends over the opposite side of the circle, making a pretzel shape! Set aside to rise while you boil a large pot of water (half full). Preheat the oven to 475°.
  7. When the water is boiling, add 3 tablespoons of baking soda. By this time the pretzels should be slightly puffy – drop one into the boiling water. It will puff up, and you should flip it to cook each side for 30 seconds – 1 minute. Prepare all of the pretzels this way and then bake them for 11-14 minutes, until golden brown.
  8. When they come out of the oven, brush them with butter and top with a generous sprinkle of parmesan cheese. Eating them warm is the best!

Refreshing Green Smoothie

Refreshing Green Smoothie

After the rush of the holidays, our stomachs can be a little worn out… January is the best time to start nourishing your body and giving it the nutrients it may have missed out on in the last month. This green smoothie is easy and you may already have the ingredients! It’s best to drink it immediately after blending.

 

Ingredients:

2 handfuls of spinach, kale, or similar greens

6 walnuts

1 teaspoon of Spirulina powder (optional)

1 cup of orange juice

A few ice cubes

A few leaves of fresh mint

  1. Combine all of the ingredients in a high powered blender.
  2. Blend until completely
  3. Drink and enjoy!
